The last day of the Vegan Challenge: day 28! The challenge has been so much fun to do. I discovered many of my favourite recipes are already vegan, like artichokes, or easily made that way and definitely as tasty as the meaty version, like chilli. I am especially happy to have found ways of baking great vegan goodies. Today’s biscuits are delicious, flavoured with orange rind and cardomom, and sweetened with maple syrup. vegan almond cookies
(makes about 24)
200 gr ground almonds
pinch of salt
pinch of baking powder
grated rind of 1 orange
the seeds of 4 cardomom pods
2 tbsp vegetable oil
50 ml maple syrup
a few slivered almonds or about 3 almonds, sliced
Stir together the dry ingredients.
Stir the vegetable oil and maple syrup together, add to the dry ingredients, and form into a stiff dough using your hands.
Break off lumps the size of a walnut, roll into balls and place on a baking sheet lined with parchment.
Flatten with the back of a spoon, brush with a little water and press a bit of almond into each cookie.
Bake at 160 degrees Celsius for about 15 minutes until golden brown.
Allow to cool and serve.
