chocolate peanut butter cupcake| jammiejammieblog.wordpress.comI wanted to make some cupcakes for Valentine’s Day. Some grown up ones; moist, deeply chocolaty cakes with rich peanut butter icing. In the end they turned out more like an April Fool’s joke. My cookery teacher would have sneered at the crackly tops, the icing wasn’t fluffy or unctuous, and when I tried to disguise them with a dusting of cocoa powder, they looked even worse. But do try them for their well-matched flavours and their retro appeal – they are bound to bring a smile to the face of your loved one on 14 February. Or any other day. For a creamier icing, just use soft butter – zap it briefly in the microwave if necessary. (makes 12)


for the cake

chocolate peanut butter cupcake| jammiejammieblog.wordpress.com100 gr dark chocolate (at least 70% cocoa solids)

2 tbsp coffee

225 gr soft butter

225 gr light brown sugar

4 eggs

150 gr self-raising flour

50 gr cocoa powder

1 tsp baking powder

for the icing

50 gr soft butter

100 gr peanut butter (I used Skippy creamy)

250 gr icing sugar


for the cake

Melt the chocolate with the coffee in a small saucepan or in the microwave.

Beat the butter and sugar until light and fluffy, then beat in the chocolate mixture and the eggs.

Fold in the flour, cocoa powder and baking powder.

Divide the mixture over 12 paper cases and bake at 170 degrees C for about 15 minutes.

Cool completely before icing or the icing will melt and slide off.

for the icing

Beat all the ingredients together until unctuous and fluffy! You can add a a tablespoon or two of warm water if it seems at all crumbly.

Now either spread on with a (palette) knife or spoon into a piping bag and run riot.
