quick brunch ideas: quesadillas and granola XL

quick brunch | jammiejammieblog.wordpress.comI love an old-fashioned brunch, don’t get me wrong: a table heaving with pancakes and muffins, eggs, juice and maple syrup. But preparing all that food is hardly what a lazy weekend morning is all about, especially if it’s much cosier in bed than out. Besides, these quesadillas and granola will leave you feeling energised for the rest of the day, rather than in a carb-overload coma. And what you put into them is entirely up to you and what you find in the fridge. I must admit to a weakness for chocolate chip granola, but if you feel better eating low-glyceamic grains, go for those. (You could always add some shavings from a raw chocolate bar…) So spend 10 minutes in the kitchen and then bring these lovely things back up to bed to share. Have a great weekend!

quesadillas

ingredients

2 soft tortillas or wraps

5 slices of melting cheese like Gouda or Mozarella

5 cherry tomatoes, thinly sliced

quarter of a red pepper, thinly sliced

pinch of parsley

salt and pepper

pinch chilli flakes

method

Heat up a frying pan large enough to fit the tortilla or wrap, no need to grease it.

Now turn the heat down to low. Place the first tortilla in the pan, top and season as desired.

Top with the second tortilla and press down lightly.

Flip over carefully after about 3 minutes. Toast the other side until the cheese has melted – about 2 minutes.

Cut into quarters and serve hot.

granola XL

ingredients

8 spoons of granola of your choice

150 ml of plain yoghurt

150 ml milk (dairy or substitute)

1 or 2 pieces of fresh fruit or handful frozen berries

handful nuts and/or pumpkin and sunflower seeds

1 tbsp ground linseed

2 tbsp low sugar jam, or 1 tbsp honey or agave syrup

1 tbsp dark chocolate, shaved or chopped

method

Can you call it method? Just heap it all into a large bowl and serve with 2 spoons.
